Thumbs up Jerusalem Artichokes

It is getting close to that time of year that you can harvest the roots of Jerusalem Artichokes, and treat yourself to a tasty treat. Here is a recipe that my wife and I use:

Dig your artichoke roots and wash them real good and then peel them if you want. Then cut them into 1/3rds. After that, take a strip of bacon and wrap around each piece and hold it in place with a wooden toothpick. Stick them in the oven at 300 degrees for 30 minutes. Thats it!
Take them out of the oven and get ready for a really tasty treat. I hope that you like them.

Jerusalem artichokes are more like potatos that a true artichoke.

Love the Jerusalem Artichokes but not keen on the side effects. For those of you that find you have a windy problem with these try par boiling first...really does help reduce that particular side effect.

I think these are the ultimate survival food....once you plant them you always have them, they look ornamental so the neighbours dont know its food.
